Traditional beef comes from 18-24 month old animals that are fed a confined feedlot diet of grains and forage. This process is done to increase marbling; the white specks of fat that you see in a steak before it’s cooked. Marketed for its marbling and advertised for the tenderness of youth, this type of beef became the standard in America. But age is no guarantee of tenderness and, due to its young age, the flavor can be bland.
It’s time to stop sacrificing our health and tastebuds to the traditional beef process. Grass-fed, pasture raised beef is healthier for us and an older animal’s meat boasts an intense beef flavor and marbling that naturally comes with age.
